Lasagna Casserole

Just so you know, this is not turning into a cooking blog since my repertoire of "recipes that taste edible" is slim. But notice I said it's "slim," and not "none!"

I was playing around combining 2 recipes last night and wound up with a masterpiece! Andrew & I continually said how good this was throughout the entire meal, and we BOTH went back for seconds. My scale says I shouldn't have, but I just couldn't resist. I'm a little embarrassed to say I'm really looking forward to eating it for lunch today.

Lasagna Casserole (with pictures! Cause what's a recipe if you can't see if it looks nasty or not?)

I used approx. 2 lbs ground beef cause we're basically carnivores in this household. The recipe called for 1 lb. Brown ground beef, seasoned with onion, and drain. Add tomato paste, water, tomato sauce, parsley, salt, sugar, garlic powder, oregano, pepper (amounts listed below). Allow to simmer approx 20 min or more if you desire (the longer, the better!).

While that's simmering, put the 8oz package of noodles (whatever shape you or your picky children or husband desire) on to boil. Now run give your child a bath or clean your kitchen. Something productive. Drain the noodles and add them to the sauce. Stir. Add 1 lb. cottage cheese to sauce mix. Stir well until evenly mixed.


Pour entire mixture into 9x13 pan. Top with 1 bag (8oz) mozzarella cheese and Parmesan if you choose. Bake at 350 until cheese is melted and bubbly. (approx 15 min).

Ingredients:
1-2 lbs ground beef, depending on how meaty you want it
3/4 C chopped onion (or onion seasoning if you're me!)
2 cans (6 oz) tomato paste
1 1/2 C water
1 T chopped parsley
1/2 regular sized can tomato sauce (sorry; I forgot how many ounces in a regular can. 14oz?)
2 tsp salt
1 tsp sugar
1 tsp garlic powder
1/2 tsp oregano
1/2 tsp pepper
noodles (I used approx 9-10 oz of no yolk egg noodles)
1 lb. cottage cheese
8 oz mozzarella cheese, shredded
Parmesan cheese (sprinkle graciously on top)

Quick question. How much water, tomato paste, etc. is needed? I think you forgot to say!

This sounds great AND easy! I'll have to try it when I have friends over. Plus I'll get to use fresh parsley and oregano from my little herb garden :-)

Audra, I just now got around to making this. Well, something loosely based on this. I used tomato juice my mom canned (left out the water), store-bought canned (diced) tomatoes, fresh herbs and garlic, and ricotta instead of cottage cheese. I made it into two and froze one :-) Let me just say this: It. Was. Delicious. Thank you for posting this!
